Purple Power Smoothie

Beets are an amazing, earthy, tasting root. They're low in net carbohydrates and they're GREAT at staining what ever the heck you put them in. I had a salad, they stained the lettuce. I had ground turkey, the turkey turned bright pink! My fingers are stained as soon as I touch the purple power veggies. But oh they're so good.

HOW TO COOK

      I had some pretty large beets. Like, the size of a grown man's fist. How'd I cook them?
  1. Scrub the beets with a brush or the back of the sponge until its clean
  2. Find a dish that is relatively deep, toss those beets in there
  3. Spray the beets with non-stick cooking spray
  4. Fill the dish/pan with about an inch of water
  5. Cover the dish/pan with aluminum foil and stick it in the oven at 400F until the beets are fork tender
  6. When they are tender, and you're ready to peel them, cut it so it lays flat and use a knife to scrap the skin off. Stick'em in the fridge when you're done
 

SMOOTHIE TIME

I like to kind of 'wing' my smoothies. So I scavenged the fridge and the pantry to find ingredients to put in my power blend! First, the fridge. Of course I had to grab my cooked and cooled beets and dice them up real nice because I have a small blender. If you have a nice and big blender, go ahead a put the whole beet in there. Next, I grabbed some strawberries. They added a natural sweetness and were a nice addition to the red/purple color and I had to use some up. For my greens, I grabbed a handful of spinach, about an ounce. I pulled out half of a pre-frozen banana for sweetness and thickness. For the liquid, I used 5 1/2 ounces of unsweetened coconut milk. I blended it all up until there were no more chunks and tried it a little bit. The power smoothie still wasn't sweet enough so I added 5 grams of pure maple syrup. Blended it up one more time and it was perfect! Go ahead and give it a try for an amazing balance of healthy carbs and fiber, fruits and veggies for breakfast.

RECIPE

  • 1/2 cooked and cooled beet
  • Strawberries
  • Half of a frozen banana
  • 1 oz Spinach
  • 5 1/2 Unsweetened coconut milk
  • 5 grams pure maple syrup

Avocados      Many health and fitness icons on social media now-a-days praise healthy fats. Specifically, avocados. I, on my own, love avocados. They are one of my most favorite fruits! The creamy yet firm texture, the nutty flavor, and don't even get me started on the color! Breakfast Tofu Taco Scramble

It's about week three now of the Athletic Vegan Experiment and so far so good! I can happily and surprisingly say that I don't crave meat all that much, but I actually crave protein in general. To supplement this I purchased a vegan protein powder and tofu has been on the shopping list every other day. ------------ To be honest, tofu is rather bland. And I only like the firm kind. Or EXTRA firm. With ALL the water squished out. And then cooked in a pan with a couple sprays of avocado oil until every side of the tofu is a nice golden brown. Or burnt, to be honest, cause... why not. The other morning, I was hunting in the fridge for some breakfast. I pulled out a container of brown rice that I meal prepped the other day, cold kidney beans, and leftover tofu, respectively. I kid you not, I through it all in a pan and called it good.
